Shrikhand

The origins of Shrikhand can be found in ancient Indian texts, especially the Bhagavata Purana and the Amarkosha. In these texts, a dish called "Mathana" is described, which is made by churning curd and adding various flavors like saffron and cardamom. Over time, this dish is now known as Shrikhand, a sweet curd-based dessert enjoyed in various regions of India.

Ingredients:
  • 1 kg curd
  • 1 cup hung curd.
  • 1 bowls of powdered sugar
  • 1 spoon of cardamom powder
  •  cashew nut
  •  almonds
  •  pistachios and saffron

Shrikhand

First pour curd in a cotton cloth. And tie it like this. Hang it for 7 to 8 hours or put a weight on the cloth to drain the water. After filtering all the water, take it out in a bowl.
1 kg of curd makes 1 bowl of chakka.  And add powdered sugar and cardamom powder and mix well. Beat the mixture well for 2 to 3 minutes. Then add dry fruits and saffron and keep it in the freezer for 2 to 3 hours. Shrikhand ready.
