Lemon Blueberry Layer Cake

    Ingredients:   2 1/2 cups all-purpose flour 2 tsp baking powder 1/2 tsp salt 1 1/2 cups sugar 3 large eggs 1 tsp vanilla extract 1 1/2 cups buttermilk 1/2 cup unsalted butter, melted. 2 tsp lemon zest 1 1/2 cups fresh blueberries Instructions:   Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the sugar, eggs, and vanilla extract until light and fluffy. Gradually add the flour mixture to the egg mixture, alternating with the buttermilk and melted butter. Stir in the lemon zest. Fold in the blueberries. Pour the batter evenly into the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
